Return of the Dragon(fruit) and Treasured Times

It’s been a very busy season of going back to school and adjusting to this new normal. The kids have been going to school in person 1-2 days a week, and the rest of the days are at home online learning. I’ve been like a teacher’s assistant guiding the lessons, an IT help desk navigating Tech issues, and a secretary keeping track of a schedule of zoom/google classroom meetings, in addition to all the other things Mommy’s do at home. Despite the craziness, I’m thankful to be able to be home with the kids in this season of life. I am thankful that I can be the one to help them and care for them through these inconsistent times and constant changes. I love hearing the little moments of laughter from them, and seeing the cute things they invent, and feeling their snuggly arms around me. These are treasured times! I Lava You! Floor is Lava!

I lava you! Floor is Lava! My kids love lava lately. We binge watched “Floor is Lava” on Netflix when we were at my sister-in-law’s house for a whole weekend. It’s a fun show that adults and kids can watch together. Afterwards, the adults and kids were testing how far they could jump. The kids even made their own floor is lava obstacle course which is a super fun activity to do while stuck indoors during quarantine. We made our own “lava“ and clay volcanoes yesterday. First, we made brown clay from a recipe from “The Spruce Crafts” website. (See link below.) We have tons of Danimal yogurt smoothie containers which we used as the volcano’s center. I just washed them out and cut off the plastic labels from the containers. (You can also use a small cup as a container for your liquid.) I put aluminum foil on a cookie sheet so it would be easier to clean up the mess afterwards. The kids put clay around the container to form a volcano. Chicken Patties with Secret Veggies

Anybody else have kids who are picky eaters? Wishing that they would eat more veggies? This has been my hope at every single dinner. I try and try and someday I know they will eat more vegetables. My mother-in-law came up with a chicken patty with hidden carrots and onions for my nephew to eat since he’d never eat veggies. I’ve made my own version and paired them with some lovely light brioche buns. The bun recipe is from “My Clever Carrot.” I’ve provided the link below. I added “Everything But the Bagel” seasoning from Trader Joe’s on the top of the brioche bun dough before baking them. The chicken patties taste delicious by themselves or with your choice of sauce. I like to eat mine with Chick-fil-A sauce. My husband likes to eat them with horseradish. Enjoy! Keroppi Buns

Did you all try making frog bread during the quarantine? Pictures of frog bread were going viral and with good reason, because frog breads brighten anyone’s day! My friend, Christine, challenged me to make frog bread. It turned out looking weird, but it was cute and delicious. We ate it for breakfast for several days. Christine then challenged me to make matcha frog bread. Challenge accepted! I proceeded to come up with a recipe for Keroppi buns! My sister and I loved everything Sanrio growing up. I remember collecting Keroppi stickers to put in my sticker albums.  I decorated the buns with Ghiradelli white vanilla flavored melting wafers, melted chocolate, and a pink icing tube. It’s ok to save time with ready made products because busy moms need all the help they can get, right? Another easy trick to proof dough is to use your microwave as a “proofing drawer.” Heat 1 cup of water in your microwave for 2 minutes. Focaccia Art

Is it true that we discover more of who we are and what our passions are as we grow older? I’ve always known that I loved art ever since a young age. Having two parents who loved art and anything creative, they always encouraged me to draw and paint and explore. It wasn’t until recently, maybe because of quarantine and being stuck at home, that I discovered a passion for cooking and baking. I got excited looking up new recipes and experimenting with new ingredients. When I was talking with my mom about how my husband had bought 3 dozen eggs from a wholesale place and that we would share some with her, she wondered what to make with them. I got super hyped as I said there was a whole world of possibilities of what to make with eggs! The light bulb went off in my head as I chatted with her, that I have a passion for cooking.
