Return of the Dragon(fruit) and Treasured Times

It’s been a very busy season of going back to school and adjusting to this new normal. The kids have been going to school in person 1-2 days a week, and the rest of the days are at home online learning. I’ve been like a teacher’s assistant guiding the lessons, an IT help desk navigating Tech issues, and a secretary keeping track of a schedule of zoom/google classroom meetings, in addition to all the other things Mommy’s do at home. Despite the craziness, I’m thankful to be able to be home with the kids in this season of life. I am thankful that I can be the one to help them and care for them through these inconsistent times and constant changes. I love hearing the little moments of laughter from them, and seeing the cute things they invent, and feeling their snuggly arms around me. These are treasured times! Focaccia Art

Is it true that we discover more of who we are and what our passions are as we grow older? I’ve always known that I loved art ever since a young age. Having two parents who loved art and anything creative, they always encouraged me to draw and paint and explore. It wasn’t until recently, maybe because of quarantine and being stuck at home, that I discovered a passion for cooking and baking. I got excited looking up new recipes and experimenting with new ingredients. When I was talking with my mom about how my husband had bought 3 dozen eggs from a wholesale place and that we would share some with her, she wondered what to make with them. I got super hyped as I said there was a whole world of possibilities of what to make with eggs! The light bulb went off in my head as I chatted with her, that I have a passion for cooking. Haha and maybe also that I love eggs! 

One of the projects that intrigued me was making Focaccia Art! I am a novice baker and had only made focaccia once before. I discovered a recipe for proofing the dough in the Instant Pot. This saves time which is so vital when you have 2 young kids. Also since it was quarantine, I only had what my husband had bought. I love thinking of new combinations of food for whatever we have in our fridge and pantry. I used red onion (since we had a 10 pound Costco bag), Thai basil (since my husband had bought a pound of it!), and sun dried tomatoes from a jar in the fridge. I love that anyone can just experiment with what they have at home and make art! Hope this encourages you to try and make some focaccia art at home!
